Ree Drummond’s Pasta Cooking is an easy casserole recipe to make ahead
Drummond demonstrated how to cook his rigatoni and cheese during an episode of The pioneer woman who presented his ideas for easy and inexpensive recipes. She called it a “meatless wonder,” noting that she “bought a huge bag of dry rigatoni” at the grocery store to keep it as a staple in the pantry.
“This is going to feature very prominently in a delicious, make-ahead casserole dish,” she explained. Drummond cooked and drained the pasta and got to work on the easy sauce. She sautéed onions and garlic in olive oil and butter, then added canned diced tomatoes and tomato paste to the pan.
“I love dry pasta. My pantry, at one point, has about seven or eight forms of dried pasta, ”she noted. “And I love the standard shapes like penne and rigatoni, spaghetti and linguine because you can find them in these super huge bags. Small specialty pasta, not so much.
Drummond added, “It’s always nice to choose one of the standard shapes when trying to prepare a cheap and easy meal. “

Drummond shared another trick to saving money for his recipe. She bought a large family bag of mini peppers which she cut in half and removed the seeds. “These are so awesome,” she said. “If you can find a family packet of peppers, that’s fine too. These mini peppers are so sweet and sweet and I love them because they are small so you can kind of decide where you want to put them. They are a little easier to control than peppers, which have to be chopped.
To assemble the pan, Drummond added a layer of sauce, covered it with half the pasta, sprinkled with cubes of mozzarella cheese and Parmesan cheese, and half the peppers. Then she repeated the layers. Drummond covered the cooking of the pasta with a layer of sauce and Parmesan cheese.
Drummond covered the refrigerated pan to heat it later in a 350 degree Fahrenheit oven for 35 minutes. She let it sit for 10 minutes and served the pasta in the oven with a side salad.

Drummond has a meaty version of his pasta casserole
Drummond shared that while his recipe is a meatless casserole dish, you can still add meat too. She recommended adding ground beef or Italian sausage to the sauce.
His sausage and cheese rigatoni recipe adds meat and uses jars of marinara sauce to make it easy to prepare. Drummond crumbles in the sausage after cooking the onions in a pan, adding cracked pepper and cooking the meat. Then she adds the marinara sauce and cooks the mixture for another 5 minutes.
Drummond assembles the casserole dish like the meatless version.
